Vegan Mayo

Ingredients
1 cup tofu
A few squirts of mustard
1/3 cup oil
1/4 cup red wine vinegar
1/2 tsp salt (or more to taste)

Combine all ingredients in a food processor and process until smooth.

Lime Flavored Rice
Marinated Black Beans
Mint Salad (WFPB)
No Grate Potato Latkes
