Potato Waffle (vegan and gluten free)

 As long as you don't need food instantly this is a pretty easy recipe with minimal ingredients and prep, especially given it is a vegan recipe.   It does require a bit of time, although most of that time could be multi-tasked.  

 Ingredients 

Medium or large sized potatoes-One per each waffle you want to make.

Earth balance-about 3 TBS per waffle (You could also use a good quality oil, such as canola)

1/2 tsp salt approximately

Optional: Maple syrup about 1 or 2 TBS per waffle

Also of note: You will need a waffle iron. 

 

1.  Cook the potatoes until very soft, but not falling apart.   I prefer cooking by boiling but you can use other methods.   

2.   Once your potatoes are cooked add earth balance to the waffle iron and let it melt.  

3.  Then add the potato (only do one potato at a time) and put some salt and Earth Balance on top.   Smash the potato in the waffle iron.  You will need to let it cook for a little longer than a typical waffle about 10 minutes.   Keep an eye on it.    

4.  Remove it from the waffle iron when ready.

5.  Once cooked, it is great topped lightly in maple syrup or lightly dipped in maple syrup.
